Chicken Curry Cauliflower Rice SoupRecipe adapted from Cotter Crunch Ingredients: 5-6 cups of cauliflower florets 2- 3 tbsp curry powder 1 tsp garlic powder 1/2 tsp cumin 1/2 tsp paprika 1/4 tsp sea salt 2-3 tbsp olive oil for roasting 3/4 cup red onion chopped 1 tsp minced garlic 2 tsp olive oil 3 cooked and seasoned chicken breasts (I seasoned mine with paprika and garlic powder) 2 cups chopped kale 2 cups chopped carrots 4 cups chicken broth 1 cup coconut milk 1/2 tsp red pepper flakes (use less if you don't want as spicy) 1/2 tsp black pepper salt to taste after cooked. For character day during homecoming week I dressed up as the mad hatter. It was a ton of fun putting together the costume. I got my hat, wig, eyebrows and white face cream from Amazon. The rest of my costume was either found at goodwill, made or I had it in my closet.
It's that time of the year again, cross country season! During the cross country season I tend to eat more of certain foods and less of others. I have complied some of my favorite things to eat during the season that help to fuel my body. Peanut Butter Banana Power ShakeMy Simply Iron-ed SaladFor lunch I like to enjoy an iron packed salad. As a female runner it is especially important to make sure to get enough iron in your system. It you do get iron deficient, it is hard to recover and takes time. It is recommended for females to get 18 mg of iron per day. This salad has 11.03 mg of iron in it. Make sure to pair this salad with a vitamin C rich food to help your body absorb the iron.

For shoes I went with some classic black t-strap sandals. My bag is the Jet-setter backpack from Henri Bendel.
That delicious gravy covered stack of cheese and fries is what the Canadians call Poutine. At almost every resturant in Canada you can find poutine or a different type of poutine. The following resturants mentioned are all located in Thunder Bay, Ontario, Canada.
The Red Lion has great food prepared with fresh tasting ingredients. I've had their Maple Cheddar burger which had a sweet and tangy sauce on it that was extraordinary. (Pictured to the right) The atmosphere of The Red Lion has a cabin vibe. There is often live music there and there is always board games that you can play. 3. Walk across the Des Moines Riverwalk Pedestrain Bridge. 4. See the Japanese gardens near the Riverwalk Pedestrain Bridge. 5. Get pizza at Fong's Pizza. They make asian inspired pizza. My favorite pizzas from them are the egg roll one and the crab ragoon. 6. Walk around downtown on the search for murals. I've found some pretty neat ones. 7. Go shopping at Raygun. They have funny t-shirts and other items. I love their magnets. 8. Shop at Domestica next to Raygun. They sell items from different crafters who are also on etsy. They always have some unique items. 9. Online, look up events in the area. You never know what will be going on down in Des Moines. 10. Eat at Jethro's BBQ. Be prepared to have to wait to get in if you go around dinner time. 11. Go biking. Go online and find maps of the bike trails in the area. Make sure to wear something bright so cars can see you. 12. Visit the Iowa State Capital building and get a tour. Be sure to go to https://www.legis.iowa.gov/resources/tourCapitol/request to request a tour. 13. In August be sure to check out the Iowa State Fair. The Iowa State fair has a wide selection of food, games, exhibits, shows. and more. 14. Visit the Papajohn Sculpture Park downtown. My favorite is by Jaume Plensa. It is called Nomade and was made in 2007. 15. Go to the Science Center of Iowa & Blank IMAX theather. The interactive activities are tons of fun. 16. Go to the Des Moines Art Center and see all the wonderful exhibits. 17. Visit Living History Farms. If you love old fashioned buildings and history this is a must do. Ingredients: 3/4 cup Milk 1/2 cup Strong Coffee or espresso 1 Tbsp. Sugar 1 Tbsp. Ghirardelli Chocolate sauce 1 1/2 tsp. Peppermint Extract Ice Crushed Candy Cane for garnish (optional) Directions: 1. In a small bowl or liquid measuring cup mix together the milk and coffee. 2. Next slowly pour in the chocolate sauce while stirring to incorporate the chocolate into the milk and coffee. 3. Lastly add the peppermint extract and sugar. Stir until all mixed well together. 4. Fill a cup with ice and pour the coffee mixture over it. 5. (optional) Top with crushed candy cane.
