Valentine's Day is only two days away. Make this pink hot cocoa to warm up with your sweetie or with friends. It's an easy recipe to make for a cold day. Pink Hot Cocoa Mix:
Ingredients: 1 1/2 cups white chocolate baking chips 1 1/3 cups original coffee creamer powder 1 1/3 cups powdered strawberry milk drink mix 1/2 cup mini marshmallows, plus more for serving Any type of milk, for serving Directions: 1. Place the white chocolate chips in the freezer for 15 minutes. Then place in a blender and blend until finely ground. 2. Combine the ground chocolate chips, strawberry milk mix, coffee creamer and mini marshmallows in a large bowl. Put into a jar or two and store for up to one month. 3. To serve heat up one cup of milk in a microwave safe mug. Mix in 1/4 cup of the cocoa mix. Feel free to top with more marshmallows.

PB Chocolate BananaOver the 6 years of running cross country in school I've changed and added to things I eat during training. I'm always looking for the next best thing to improve my performance. I wanted to share a few things I've added this year and why. Pictured below is my post run snack. It consists of pickles, trail mix and tart cherry juice. 1. Tart Cherry JuiceWhen I was talking to my coach this summer she recommended for me to try drinking tart cherry juice. She told me it was suppose to help with muscle soreness and so I decided to give it a try. I was curious as to what else it could do for me so I did a little research. Tart cherry juice has been tested with marathon runners and recovery time. They found that runners who drank the juice leading up to the race and after their race had a faster recovery. It has also showed signs of decreasing symptoms of exercise induced muscle damage. Along with these helpful running benefits it also helps in lowering the risk of gout attacks, strokes and helps protect the heart. I like to drink a small glass of juice in the morning and one after my run. 2. Beets
3. PicklesAgain I was reading another article on Runner's World. This one was about weird foods some professional runner's eat. The one that stood out to me was pickles. Ultrarunner Mike Wardian swears by eating them mid race or post race because they help to replace the salt lost by sweat.

Chicken Curry Cauliflower Rice SoupRecipe adapted from Cotter Crunch Ingredients: 5-6 cups of cauliflower florets 2- 3 tbsp curry powder 1 tsp garlic powder 1/2 tsp cumin 1/2 tsp paprika 1/4 tsp sea salt 2-3 tbsp olive oil for roasting 3/4 cup red onion chopped 1 tsp minced garlic 2 tsp olive oil 3 cooked and seasoned chicken breasts (I seasoned mine with paprika and garlic powder) 2 cups chopped kale 2 cups chopped carrots 4 cups chicken broth 1 cup coconut milk 1/2 tsp red pepper flakes (use less if you don't want as spicy) 1/2 tsp black pepper salt to taste after cooked. It's that time of the year again, cross country season! During the cross country season I tend to eat more of certain foods and less of others. I have complied some of my favorite things to eat during the season that help to fuel my body. Peanut Butter Banana Power ShakeMy Simply Iron-ed SaladFor lunch I like to enjoy an iron packed salad. As a female runner it is especially important to make sure to get enough iron in your system. It you do get iron deficient, it is hard to recover and takes time. It is recommended for females to get 18 mg of iron per day. This salad has 11.03 mg of iron in it. Make sure to pair this salad with a vitamin C rich food to help your body absorb the iron.
Other Small Snacks
Ingredients: 3/4 cup Milk 1/2 cup Strong Coffee or espresso 1 Tbsp. Sugar 1 Tbsp. Ghirardelli Chocolate sauce 1 1/2 tsp. Peppermint Extract Ice Crushed Candy Cane for garnish (optional) Directions: 1. In a small bowl or liquid measuring cup mix together the milk and coffee. 2. Next slowly pour in the chocolate sauce while stirring to incorporate the chocolate into the milk and coffee. 3. Lastly add the peppermint extract and sugar. Stir until all mixed well together. 4. Fill a cup with ice and pour the coffee mixture over it. 5. (optional) Top with crushed candy cane.
